2 pounds boneless, skinless chicken breasts
1 medium onion, diced
2 carrots, sliced
2 stalks celery, sliced
2 cups potatoes, diced (Yukon Gold or Russet work well)
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon smoked paprika
Salt and pepper to taste
1 cup low-sodium chicken broth
1 tablespoon soy sauce (optional, for added depth of flavor)
Instructions
Prepare the Slow Cooker: Spray the inside of your slow cooker with non-stick cooking spray or lightly coat with olive oil to prevent sticking.
Add Chicken: Place the boneless chicken breasts at the bottom of the slow cooker, ensuring they are distributed evenly.
Layer Vegetables: On top of the chicken, add the diced onions, sliced carrots, celery, and potatoes.
Season: Sprinkle the minced garlic, thyme, rosemary, smoked paprika, salt, and pepper over the vegetables.
Add Liquid: Pour the chicken broth and soy sauce (if using) over the top of the chicken and vegetables.

Shred Chicken: Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the pot.
