A delectable appetizer or side dish that combines the essence of classic French onion soup with garlic bread. It's cheesy, savory, and perfect for gatherings.

1 large loaf of French or Italian bread (about 16-20 ounces), ideally day-old
2 large onions, thinly sliced (about 4 cups when cooked down)
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish, optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and golden brown, about 20-25 minutes. Add balsamic vinegar during the last few minutes of cooking.
In a mixing bowl, combine the softened butter, minced garlic, salt, pepper, and thyme. Mix until well blended.
Slice the loaf of bread in half lengthwise. Spread the garlic butter mixture generously on both halves.
Evenly distribute the caramelized onions over the buttered bread. Sprinkle the mozzarella and Parmesan cheese on top.
Place the bread halves on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
Remove the bread from the oven. If desired, sprinkle fresh chopped parsley on top. Slice and serve warm.
