Ingredients
Scale:
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup rolled oats
1/2 cup unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup unsalted butter, softened (for frosting)
2 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract (for frosting)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.
In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
Add the egg and vanilla extract to the butter mixture, mixing until well combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Fold in the rolled oats until evenly distributed throughout the dough.
Spread the oatmeal cookie dough evenly in the prepared baking pan. Use a spatula to smooth the top.
Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
Allow the cookie bars to cool completely in the pan on a wire rack.
While the bars cool, prepare the vanilla frosting. In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well. Add milk and vanilla extract, continuing to beat until smooth and fluffy.
Once the bars are cooled, spread the vanilla frosting evenly over the top. Cut into squares or rectangles for serving.
