4 cups of grated carrots (about 4-5 medium carrots, freshly peeled)
1 cup of raisins (preferably plump, juicy raisins)
1/2 cup of chopped walnuts (optional)
1/4 cup of shredded coconut (optional)
1/2 cup of mayonnaise
1/4 cup of Greek yogurt
2 tablespoons of honey
1 tablespoon of apple cider vinegar or lemon juice
Salt and pepper to taste
Instructions
Begin by preparing the carrots. Peel the carrots thoroughly to remove any dirt and then grate them using a box grater or a food processor.
In a large mixing bowl, combine the grated carrots, raisins, chopped walnuts, and shredded coconut (if using). Toss the ingredients together gently.
In a separate smaller bowl, prepare the dressing. Mix together the mayonnaise, Greek yogurt, honey, apple cider vinegar (or lemon juice), and a pinch of salt and pepper. Whisk until smooth and creamy.
