Description
A nutritious and delicious meal that combines grilled chicken with roasted broccoli, topped with a creamy garlic sauce.
Ingredients
Scale:
2 Chicken breasts or thighs
2 tablespoons Olive oil
1 teaspoon Garlic powder
Salt and pepper to taste
2 cups Fresh broccoli florets
1 tablespoon Olive oil
1 tablespoon Lemon juice
Salt to taste
1 cup Greek yogurt or sour cream
2 cloves Minced garlic
1 tablespoon Fresh herbs (parsley or dill)
1 teaspoon Lemon zest and juice
Salt and pepper to taste
Instructions
Marinate the Chicken: In a mixing bowl, combine chicken with olive oil, garlic powder, salt, and pepper. Allow it to marinate for at least 30 minutes to absorb the flavors. For the best results, marinate overnight.
Prepare the Broccoli: Preheat your oven to 400°F (200°C). Cut broccoli into bite-sized florets. Toss them with olive oil, lemon juice, and salt. Spread evenly on a baking sheet.
Grill the Chicken: Preheat your grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes before slicing.
Roast the Broccoli: Place the baking sheet in the oven and roast for about 20 minutes, or until the broccoli is crisp-tender and slightly charred at the edges.
Make the Creamy Garlic Sauce: In a small bowl, mix Greek yogurt or sour cream with minced garlic, fresh herbs, lemon zest, and juice. Season with salt and pepper to taste.
Assemble the Bowls: In a bowl, layer the grilled chicken slices, roasted broccoli, and a generous drizzle of creamy garlic sauce. Serve immediately for the best flavor.
Garnish & Serve: For an added touch, garnish the bowl with chopped fresh herbs like parsley or basil right before serving. This adds a pop of color and a burst of fresh aroma that enhances the overall presentation and flavor.
