Instructions
In a large mixing bowl, combine the p■ rice cereal and granola. Stir them together gently until evenly mixed.
In a small saucepan over medium heat, combine the peanut butter and honey (or maple syrup). Stir continuously until the mixture is smooth, about 3-5 minutes.
Remove the saucepan from the heat and stir in the vanilla extract.
Pour the warm peanut butter mixture over the p■ rice cereal and granola. Gently fold the mixture until all the dry ingredients are evenly coated.
Line a 9x9 inch baking dish with parchment paper. Transfer the mixture into the dish, pressing it down firmly to create an even layer.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until melted and smooth.
Pour the melted chocolate over the packed crunch mixture, spreading it evenly.
