Instructions

  1. Prepare your work surface by lining a baking sheet with parchment paper or a silicone baking mat.
  2. In a large saucepan, combine the granulated sugar, light corn syrup, and salt. Stir the mixture over medium heat until the sugar is completely dissolved.
  3. Once the sugar mixture is dissolved, increase the heat to medium-high. Allow the mixture to come to a boil without stirring until it reaches 300°F (150°C).
  4. While waiting for the sugar mixture to reach the correct temperature, place the pecan halves in a dry skillet over medium heat. Toast the pecans for about 5-7 minutes, stirring frequently.
  5. When the sugar mixture reaches 300°F, remove it from the heat. Quickly stir in the toasted pecans, butter, vanilla extract, and baking soda.
  6. Pour the mixture onto the prepared baking sheet and use a spatula to spread it out evenly.
  7. Allow the pecan brittle to cool completely at room temperature, which typically takes about 30 minutes to 1 hour. Once cool, break it into pieces.
