Rooted in traditional hearty family meals, this casserole combines tender chicken, fluffy rice, and a medley of savory ingredients enveloped in a creamy sauce.
Ingredients

2 cups uncooked white rice
1 cup shredded cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
4 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1 cup milk
2 cups cooked chicken, shredded or diced
1 cup frozen mixed vegetables
1 cup crushed buttery crackers
2 tablespoons melted butter
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine uncooked rice, garlic powder, onion powder, salt, and pepper. Stir well.
Add the shredded chicken, cream of chicken soup, milk, and chicken broth to the bowl. Stir until all ingredients are well mixed.
Fold in the frozen mixed vegetables.
Pour the entire mixture into a greased 9x13 inch baking dish. Spread it evenly.
If using, mix the crushed buttery crackers with melted butter and sprinkle over the casserole.
Cover the baking dish with aluminum foil and bake for 45 minutes.
After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown.
Remove from the oven and let it rest for 10 minutes before serving.
