Ingredients

4 cups mixed fresh greens (such as romaine and iceberg), washed and dried thoroughly
1 cup diced cooked chicken, preferably rotisserie
1 cup diced ham, smoked or honey-glazed
1 cup diced celery
1/2 cup diced red onion
1/2 cup sweet pickle relish
1/4 cup slivered almonds or chopped walnuts, toasted
1/4 cup crumbled blue cheese (optional)
1 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon lemon juice
Salt and pepper to taste
Instructions
In a medium bowl, combine 1 cup of mayonnaise, 2 tablespoons of Dijon mustard, and 1 tablespoon of lemon juice. Whisk until smooth and creamy, then season with salt and pepper. Set aside.
Dice the cooked chicken and ham into bite-sized pieces. Chop the fresh greens if needed. Finely dice the celery and red onion.
In a large mixing bowl, combine the mixed greens, diced chicken, diced ham, celery, and red onion. Toss gently.
Stir in the sweet pickle relish and nuts. Sprinkle crumbled blue cheese over the top if desired.
Pour the dressing over the salad mixture and toss gently until well coated.
