Kanelbulle, also known as Swedish cinnamon rolls, are a beloved treat in Swedish culture, often enjoyed as part of a fika, the Swedish coffee break. With a perfect balance of sweet pastry dough, fragrant spices, and a luscious cinnamon and sugar filling, kanelbullar are a testament to the art of Scandinavian baking techniques.

4 cups all-purpose flour
1/2 cup granulated sugar
2 1/4 teaspoons active dry yeast
1 teaspoon salt
1 teaspoon ground cardamom
1 cup whole milk, warmed
1/4 cup unsalted butter, melted
1 large egg, room temperature
Optional: 1 teaspoon vanilla extract
1/2 cup unsalted butter, softened
3/4 cup brown sugar
2 tablespoons ground cinnamon
Optional: 1/4 cup chopped nuts or raisins
1 egg, beaten
Pearl sugar for sprinkling
Optional: A pinch of ground cinnamon mixed with the pearl sugar
Instructions
In a large mixing bowl, combine the flour, granulated sugar, yeast, salt, and cardamom. Mix until well incorporated.
In a separate bowl, mix the warmed milk, melted butter, and egg. Pour this mixture into the dry ingredients and stir until a dough begins to form.
Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, or until smooth and elastic.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle, about 1/4 inch thick.
Spread the softened butter evenly over the dough. Mix brown sugar and cinnamon, then sprinkle over the buttered dough.
Roll the dough into a tight log, starting from a longer side. Slice the log into 12 equal pieces, around 1.5 inches thick.
Place the slices on the prepared baking sheet, leaving space between each roll. Cover with a towel and let them rise for another 30 minutes.
Brush the tops of the rolls with the beaten egg and sprinkle with pearl sugar.
Bake in the preheated oven for 15-20 minutes, or until golden brown.
