Prepare four sheets of aluminum foil, each about 12 inches long. Fold each sheet in half, then unfold it to create a crease.
Place one chicken breast in the center of each foil sheet. Drizzle the lemon butter mixture generously over the chicken.
If using vegetables, distribute them evenly around the chicken on each foil packet.
Fold the foil over the chicken and vegetables, sealing it tightly to form a packet.
Place the packets on a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
