Ingredients
Scale:
1 bag (10-12 oz) crispy tortilla chips
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
1 cup cooked ground beef or turkey (or black beans for vegetarian nachos)
1 cup fresh pico de gallo or diced tomatoes
1/2 cup sliced jalapeños (pickled or fresh)
1 cup black olives, sliced
1/4 cup chopped green onions
1 ripe avocado or 1 cup guacamole
2 tablespoons butter (for cheese sauce)
2 tablespoons all-purpose flour (or cornstarch for gluten-free)
1 cup milk (whole or 2% for creaminess)
1 1/2 cups shredded cheese (cheddar or a cheese blend for cheese sauce)
1 teaspoon garlic powder
1 teaspoon chili powder
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until bubbly, stirring constantly. Gradually add the milk, whisking until smooth. Cook until the sauce thickens, about 2-3 minutes.
Lower the heat and stir in your shredded cheese until melted and creamy. Season with garlic powder, chili powder, salt, and pepper. Remove from heat and set aside.
On a large baking sheet, spread out the tortilla chips in an even layer. Distribute the cooked ground beef or black beans over the chips.
Drizzle the homemade nacho cheese sauce generously over the chips and meat.
Sprinkle shredded cheese, pico de gallo, jalapeños, black olives, and green onions over the top.
Bake for about 10-15 minutes, or until the cheese is melted and bubbly. Keep an eye on the nachos to prevent burning.
Remove the nachos from the oven and let them cool slightly before serving.
