1 pound ground beef
2 cups elbow macaroni
1 medium onion, chopped
1 bell pepper, chopped (any color)
2 cloves garlic, minced
1 can (15 ounces) tomato sauce
1 can (14.5 ounces) diced tomatoes
2 tablespoons tomato paste
1 cup beef broth
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon paprika
Salt and pepper to taste
Shredded cheddar cheese (optional)
Chopped fresh parsley (optional)
Instructions
In a large pot or Dutch oven, heat a splash of oil over medium heat. Add the chopped onion and bell pepper, cooking until they are soft, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Increase the heat to medium-high and add the ground beef. Break it apart with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat.
Stir in the tomato sauce, diced tomatoes, and tomato paste. Mix well to combine.
Add the beef broth, elbow macaroni, oregano, basil, paprika, salt, and pepper. Stir until everything is well mixed.
Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes, stirring occasionally.
Once cooked, taste and adjust seasonings if necessary. If desired, top with shredded cheddar cheese and cover for a few minutes until melted.
