1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1 cup cooked chicken breast, diced (or tofu for a vegetarian option)
1/2 cup cooked bacon, crumbled (optional)
1/2 cup crumbled feta cheese (or goat cheese for a creamier option)
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste
1 tablespoon fresh herbs (such as basil or parsley), finely chopped
Instructions
Rinse the mixed greens thoroughly under cold water and spin dry in a salad spinner. Place them in a large salad bowl and ensure they are completely dry.
Add the halved cherry tomatoes, diced cucumber, and sliced red onion to the bowl with the greens. Toss these ingredients gently.
If using chicken, ensure it's fully cooked and diced. For a vegetarian option, substitute with grilled tofu cubes. If using bacon, cook until crispy, crumble, and set aside.
Add the diced chicken (or tofu) and crumbled bacon (if using) to the vegetables in the bowl.
