1 lb ground beef (or a mix of beef and pork)
1/2 cup breadcrumbs (gluten-free if needed)
1/4 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1/4 cup finely chopped parsley
Salt and pepper to taste
4 large potatoes, peeled and cubed
2 tbsp olive oil
Salt and pepper to taste
1 tsp dried thyme
1 tsp paprika
2 cups beef broth
1 can (14 oz) diced tomatoes
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp oregano
Instructions
Prepare the Meatballs: In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, and pepper. Mix well and roll into small, even-sized balls about 1 inch in diameter.
Brown the Meatballs: Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides.
Prepare the Potatoes: Toss the cubed potatoes in olive oil, salt, pepper, thyme, and paprika.
Assemble in Slow Cooker: Place the browned meatballs and seasoned potatoes into the slow cooker. Pour the beef broth, diced tomatoes, tomato paste, Worcestershire sauce, and oregano over them. Stir gently to combine.
Cook: Cover the slow cooker and set to low. Cook for 6-8 hours until the potatoes are tender and the meatballs are fully cooked. Remove the lid during the last 30 minutes if a thicker sauce is desired.
