1/2 cup breadcrumbs (or gluten-free alternative)
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 large egg
3 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons olive oil
1 medium onion, finely chopped
2 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon cornstarch (optional, for thickening)
Instructions
In a large bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined; do not overmix.
Using your hands, form the mixture into 1-inch meatballs. Place them on a baking sheet lined with parchment paper.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the meatballs in batches, browning them for about 4-5 minutes on each side until golden brown. Transfer the browned meatballs to a plate.
In the same skillet, add chopped onion and sauté until soft and translucent, about 5 minutes. Pour in the beef broth and Worcestershire sauce, bringing the mixture to a gentle simmer.
Return the browned meatballs to the skillet. Cover and let them simmer in the gravy for 20-25 minutes.
If you prefer a thicker gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir it into the gravy and cook for an additional 2-3 minutes until thickened.
Remove from heat, season with additional salt and pepper as needed, and serve the meatballs in gravy hot.
