8 oz (1 package) of cream cheese, softened
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions
1 tsp garlic powder
1 tsp cumin
1/2 tsp chili powder
1 cup diced bell peppers (red, green, or yellow)
1/2 cup black olives, sliced
1 cup cooked and shredded chicken or diced tofu (for vegetarian version)
Additional cilantro and lime wedges for garnish
Instructions
In a mixing bowl, combine the softened cream cheese, chopped cilantro, green onions, garlic powder, cumin, and chili powder. Mix thoroughly until well blended.
Lay a tortilla flat on a clean surface. Spread an even layer of the cream cheese mixture over the tortilla, leaving about half an inch from the edges.
Evenly distribute the diced bell peppers, sliced olives, and any optional protein over the cream cheese layer.
Starting at one end, tightly roll the tortilla away from you. Press gently but firmly to ensure a tight roll.
