1 cup frozen mixed vegetables (peas, carrots, corn)
½ cup celery, diced
½ cup onion, chopped

1 cup chicken broth
½ cup milk or heavy cream
1 teaspoon garlic powder

Prepare the Pie Crust: In a large mixing bowl, combine the flour, salt, and sugar. Add the diced butter. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs, with visible pieces of butter for a flaky texture.
Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Make the Creamy Filling: In a large skillet, melt the butter over medium heat. Add the onions and celery, cooking until softened (about 3-4 minutes). Stir occasionally to prevent sticking.
Sprinkle the flour over the cooked vegetables and stir to combine. Cook for an additional minute.
Gradually whisk in the chicken broth and milk until the mixture is smooth. Bring it to a simmer and cook until thickened (about 3-5 minutes).
Remove from heat and stir in the shredded chicken, frozen mixed vegetables, garlic powder, salt, and pepper. Mix well and set aside to cool slightly.
Assemble the Mini Pies: Preheat your oven to 400°F (200°C). On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out circles that are slightly larger than your muffin tin cups.
