1 cup shredded cheese (cheddar, mozzarella, or a blend)
1/2 cup cooked bacon bits (optional for a non-vegetarian version)
2 green onions, finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (adjust for heat preference)
12-15 mini sweet peppers (or a mix of sweet and spicy varieties for added heat)
2 tablespoons breadcrumbs or crushed tortilla chips (for crunch)
1 tablespoon olive oil (to drizzle over for a crispy finish)
Instructions
In a medium bowl, combine the softened cream cheese, shredded cheese, bacon bits (if using), chopped green onions, garlic powder, onion powder, black pepper, and cayenne pepper. Mix until well combined and creamy.
Preheat your oven to 375°F (190°C).
Wash the mini peppers thoroughly under cold running water. Slice them in half lengthwise and remove the seeds and white membranes.
Using a spoon or a piping bag, generously fill each pepper half with the cream cheese mixture.
In a small bowl, combine the breadcrumbs or crushed tortilla chips with olive oil. Mix well and sprinkle this mixture on top of the st■ peppers.
Place the st■ peppers on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and the tops are golden brown.
