1 ¾ cups all-purpose flour
1 ½ cups granulated sugar
½ cup unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
½ tsp salt
½ cup unsalted butter, melted
1 cup water
2 large eggs
1 tsp vanilla extract
2 cups mini marshmallows
1 cup chopped pecans (optional)
1 cup chocolate frosting (store-bought or homemade)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well blended.
In a saucepan, combine the melted butter and water. Bring the mixture to a boil over medium heat.
Pour the boiling butter and water mixture into the dry ingredients. Stir until just combined.
Beat in the eggs and vanilla extract until the batter is smooth.
Pour the batter into the prepared baking pan, smoothing it out evenly.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
As soon as the cake comes out of the oven, sprinkle the mini marshmallows evenly over the warm cake.
Place the cake under the broiler for 1-2 minutes, just until the marshmallows begin to brown.
Once the marshmallows are toasted, spread the chocolate frosting over the top.
