1 cup granulated sugar
2 teaspoons baking powder
½ teaspoon baking soda

½ cup unsalted butter, melted
1 large egg
1 cup buttermilk
1 teaspoon vanilla extract
½ cup granulated sugar for topping
1 tablespoon ground cinnamon for topping
1 cup powdered sugar for optional glaze
2 tablespoons milk for optional glaze
½ teaspoon vanilla extract for optional glaze
Instructions
Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
In another bowl, whisk the melted butter, egg, buttermilk, and vanilla extract until smooth.
Gently fold the wet ingredients into the dry ingredients until just combined.
Evenly distribute the batter into the prepared muffin tin, filling each cup about ¾ full.
Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
While the muffins are baking, mix the granulated sugar and cinnamon in a small bowl.
Once the muffins are done, let them cool slightly for about 5 minutes, then roll the tops of each muffin in the cinnamon sugar mixture.
If desired, whisk together the powdered sugar, milk, and vanilla extract for the optional glaze, and drizzle over the muffins after they have cooled completely.
