4 large bell peppers (any color)
1 pound ground beef (or substitute with turkey or plant-based meat)
1 cup cooked rice (white or brown)
1 small onion, finely chopped
2 cloves garlic, minced
1 can (15 ounces) diced tomatoes (drained)
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 cup shredded cheese (cheddar, mozzarella, or a blend)
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds. Place the prepared peppers upright in a baking dish.
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula.
Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent and the garlic is fragrant.
Stir in the drained diced tomatoes, cooked rice, oregano, basil, salt, and pepper. Mix everything together thoroughly.
