Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.
In a large mixing bowl, sift together the flour, baking powder, baking soda, cinnamon, salt, and sugar until well combined.
In a separate bowl, whisk together the vegetable oil, water, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Gently fold in the raisins or currants, chopped nuts (if using), and applesauce or mashed bananas. Be careful not to overmix; a few lumps are acceptable.
Pour the batter into the prepared baking pan, smoothing the top with a spatula.
