Nothing evokes the essence of summer quite like a slice of Peach Cobbler Cake. This delightful dessert combines the comforting flavors of traditional Southern peach cobbler with the moist, tender crumb of homemade cake.

1 ½ cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter, softened to room temperature
1 cup milk (whole milk is preferred)
1 teaspoon vanilla extract
4 cups fresh peaches, peeled and sliced
½ cup brown sugar
1 teaspoon cinnamon
2 tablespoons lemon juice
2 teaspoons sugar (for sprinkling on top)
Optional: whipped cream or vanilla ice cream for serving
Instructions
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the sliced peaches, brown sugar, cinnamon, and lemon juice. Toss to coat the peaches evenly and let the mixture sit.
In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt.
In another bowl, cream the softened butter until smooth, then add the milk and vanilla extract. Mix until fully incorporated.
Gradually add the wet mixture to the dry ingredients, stirring until just combined.
Grease a 9x13 inch baking dish and pour the batter into it, spreading evenly.
Spoon the peach mixture over the cake batter without stirring.
Bake for 45-55 minutes or until golden brown and a toothpick comes out clean.
Allow the cake to cool for about 10 minutes before serving.
