Peach Cobbler Cake is a delightful fusion of two classic desserts, merging the comforting, juicy filling of a traditional cobbler with the soft, moist crumb of a homemade cake.
Ingredients
Scale:
2 cups all-purpose flour, sifted
1 1/2 cups granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1 1/4 cups whole milk
2 large eggs, beaten
4 cups fresh peaches, peeled and sliced
1/4 cup brown sugar, packed
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with butter or non-stick spray.
In a large mixing bowl, combine the dry ingredients: flour, granulated sugar, baking powder, and salt. Mix until well blended.
In a separate bowl, whisk together the wet ingredients: melted butter, milk, and eggs. Pour this mixture into the dry ingredients and stir until just combined.
In a medium saucepan over medium heat, combine the peach filling ingredients: peaches, brown sugar, vanilla extract, and cinnamon. Cook for about 5-7 minutes until the peaches are tender.
Pour the batter into the prepared pan, spreading it evenly. Spoon the peach mixture over the batter, distributing evenly.
Mix the topping ingredients in a small bowl and sprinkle evenly over the top of the cake.
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the cake to cool for at least 10 minutes before serving.
