- 1 cup buttermilk
- 3 large eggs

- 2 cups fresh peaches, peeled and diced
- 1 cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- ½ cup heavy cream
- 1 tablespoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, beat the butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- Gradually add the flour mixture and buttermilk to the butter mixture, alternating between the two.
- Fold in the diced peaches gently.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Cool the cakes in the pans for 10 minutes, then invert onto a wire rack to cool completely.
- For the frosting, beat the butter until creamy, then gradually add powdered sugar and heavy cream until desired consistency is reached.
- Mix in the vanilla extract and frost the cooled cakes.
