  1. In a large mixing bowl, combine the rolled oats, powdered sugar, and ground flaxseed. Mix well until all dry ingredients are evenly distributed.
  2. Add the creamy peanut butter, honey (or maple syrup), and vanilla extract to the dry ingredients. Use a spatula or your hands to mix until a sticky dough forms.
  3. Once the mixture is well combined, cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  4. After chilling, scoop out about a tablespoon of the mixture and roll it into a ball shape. Repeat until all mixture is formed into balls.
  5. If you are adding chocolate chips, melt them in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Dip each peanut butter ball halfway into the melted chocolate, then place them on a parchment-lined baking sheet.
  6. Once all the balls are coated, sprinkle with chopped nuts or seeds if desired. Allow the chocolate to set at room temperature, or place the tray in the fridge for about 15 minutes.
