Ingredients
Scale:
1 cup rolled oats
1/2 cup unsweetened cocoa powder (optional)
1/4 cup ground flaxseed (optional)
1 cup creamy peanut butter (natural preferred)
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1/2 cup dark chocolate chips (optional)
Coarse sea salt (optional)
Instructions
In a large mixing bowl, combine rolled oats, cocoa powder, and ground flaxseed. Stir until well mixed.
Pour in the creamy peanut butter, honey (or maple syrup), and vanilla extract. Mix until a cohesive dough forms.
If the dough is too sticky, refrigerate for about 30 minutes.
Scoop about 1 tablespoon of the mixture and roll into a ball. Place onto a lined baking sheet.
For chocolate-covered peanut butter balls, melt dark chocolate chips and dip each ball, allowing excess to drip off.
Place the baking sheet in the refrigerator for at least 30 minutes to allow the balls to firm up.
