1 ½ cups graham cracker crumbs
½ cup granulated sugar
½ cup unsalted butter, melted
2 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
¼ cup sour cream
1 cup chopped pecans
½ cup caramel sauce (store-bought or homemade)
Instructions
Preheat your oven to 325°F (160°C).
In a medium mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9x13-inch baking dish to create an even layer. Bake for 10 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer on medium speed until smooth and creamy, about 2-3 minutes. Scrape down the sides as needed.
Gradually add the sugar and mix until incorporated. Then, add the eggs one at a time, mixing well after each addition.
