  1. Roast red bell peppers if not using jarred, under a broiler for 10-15 minutes until charred.
  2. In a large mixing bowl, combine softened cream cheese, sour cream, and shredded cheddar cheese. Blend until smooth.
  3. Stir in chopped roasted red bell peppers, minced garlic, chopped jalapeños, onion powder, and smoked paprika. Season with salt and pepper.
  4. Taste the dip and adjust seasoning as desired.
  5. Transfer the dip to a serving bowl, cover, and refrigerate for at least 30 minutes.
  6. Serve with dippers of your choice, garnished with fresh herbs and extra cheese if desired.
