1 pound Polish sausage (kielbasa), sliced into 1-inch pieces
1 medium onion, chopped
3 cups sauerkraut, drained and rinsed
4 medium potatoes, peeled and cubed
2 cloves garlic, minced
1 teaspoon caraway seeds (optional)
1 teaspoon black pepper
1 teaspoon paprika
1 tablespoon brown sugar
1 teaspoon salt (adjust to taste)
1 cup chicken or vegetable broth (low sodium recommended)
Instructions
Begin by preparing your ingredients: slice the Polish sausage and chop the onion. Rinse the sauerkraut thoroughly to reduce its tanginess if you prefer a milder flavor, and set all ingredients aside for easy assembly.
In your crockpot, layer the cubed potatoes at the bottom.
Add the chopped onion on top of the potatoes.
Next, add the sauerkraut evenly over the onions.
Now, layer the sliced Polish sausage on top of the sauerkraut.
Sprinkle the minced garlic, caraway seeds (if using), black pepper, paprika, brown sugar, and salt over the sausage.
Pour the chicken or vegetable broth over all the ingredients in the crockpot.
Cover your crockpot with the lid and set it to cook on low for about 6-8 hours or on high for 4-6 hours.
About 30 minutes before serving, check the potatoes for doneness.
Once everything is cooked through and the flavors have developed, give it a gentle stir to mix the layers.
