4 bone-in pork chops (about 1 inch thick)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika
2 tablespoons olive oil (for browning)
1 medium onion, sliced
3 cloves garlic, minced
2 cups mushrooms, sliced
1 cup low-sodium chicken broth
1 tablespoon soy sauce
1 cup heavy cream (for creamy mushroom sauce)
Fresh parsley, chopped (for garnish)
Instructions
Pat the bone-in pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and smoked paprika.
In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear for about 3-4 minutes on each side until they are golden brown.
In the bottom of your slow cooker, place the sliced onions and minced garlic.
Place the browned pork chops on top of the onions and garlic in the slow cooker.
In a mixing bowl, combine chicken broth and soy sauce. Pour this mixture carefully over the pork chops.
Scatter the sliced mushrooms over the pork chops. Add other vegetables if desired.
Cover the slow cooker and set it on low for 6-8 hours or on high for 3-4 hours.
About 30 minutes before serving, stir in the heavy cream.
