2 cups rolled oats
1 cup almond flour
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup almond butter (or peanut butter for nut lovers)
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
1 cup mixed dried fruits (raisins, cranberries, apricots)
1/2 cup chopped nuts (almonds, walnuts, or pecans)
1/4 cup coconut flakes (optional)
Instructions
Line an 8x8 inch baking pan with parchment paper, allowing it to hang over the edges for easy removal.
In a large mixing bowl, combine the rolled oats, almond flour, salt, and cinnamon. Stir until well combined.
In a separate bowl, whisk together the almond butter, maple syrup, and vanilla extract until smooth.
Pour the wet mixture into the dry ingredients and mix thoroughly until every oat is coated.
Fold in the dried fruits, nuts, and coconut flakes until evenly distributed.
Transfer the mixture into the prepared baking dish. Use a spatula or your hands to firmly press it down into an even layer.
Place the pan in the refrigerator for at least 2 hours to allow the bars to firm up.
Once set, lift the bars out of the pan using the overhanging parchment paper. Cut into squares or rectangles, and enjoy!
