1 pound of Italian sausage, sliced into rounds
2 pounds of potatoes, cut into wedges (Yukon Gold or red potatoes work best)
1 large onion, sliced
1 bell pepper, sliced (use red, yellow, or green for color variety)
2 tablespoons olive oil
3 cloves of garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt and black pepper to taste
1/4 cup grated Parmesan cheese (optional)
Chopped fresh parsley for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C). Prepare a large baking dish or a rimmed baking sheet.
In a large bowl, combine the potato wedges and sliced onions. Drizzle with olive oil, sprinkle with salt, pepper, rosemary, and thyme. Toss well to combine.
Arrange the potato mixture in the prepared baking dish in an even layer. Place the sausage slices on top.
Add the sliced bell peppers over the sausage and potatoes, scattering them evenly.
Sprinkle the minced garlic over the top.
Bake in the preheated oven for 35-40 minutes, or until the potatoes are tender and the sausage is cooked through.
For an extra crisp finish, broil the dish for an additional 2-3 minutes, watching closely.
Once cooked, remove from oven, let it cool for a few minutes, and if desired, finish with a sprinkle of Parmesan cheese and fresh parsley before serving.
