Scottish Tablet is a deliciously rich and creamy dessert hailing from Scotland, often described as a buttery confectionary that melts in your mouth. This traditional Scottish sweet has a texture reminiscent of fudge but offers a unique flavor profile that sets it apart.

1 kg (2.2 lbs) granulated sugar
1 ½ cups (375 ml) full-fat milk powder
1 cup (250 g) unsalted butter
1 cup (250 ml) heavy cream
1 tsp vanilla extract
Nuts (chopped hazelnuts or almonds for a nutty variation)
Pinch of sea salt (to enhance flavor)
Instructions
Prepare a square or rectangular cake tin by lining it with parchment paper, allowing some excess paper to hang over the edges for easy removal later.
In a large saucepan, combine the granulated sugar, heavy cream, and butter. Heat over medium heat, stirring constantly until the butter has melted and the sugar has dissolved completely.
Once dissolved, bring the mixture to a boil. Allow it to boil for approximately 10-15 minutes without stirring, watching for bubbles to form and the color to transition into a light golden hue.
Remove the pan from heat and let it cool for about 5 minutes. Then, stir in the milk powder and vanilla extract until fully incorporated.
Return the pan to low heat and continue stirring for another 10 minutes. The mixture should thicken and pull away from the sides of the pan.
Pour the tablet mixture into the prepared cake tin, smoothing the top with a spatula. If you’re using nuts, sprinkle them on top and gently press them into the mixture.
Allow the tablet to cool at room temperature for at least 1-2 hours until it sets firmly.
Once set, lift the tablet from the tin using the parchment paper and cut it into small squares or bars.
