Ingredients
Scale:
2 to 3 pounds of pork roast (shoulder or loin works well)
1/2 cup honey
1/4 cup Dijon mustard
1/4 cup soy sauce (low sodium preferred)
Instructions
In a medium bowl, whisk together the honey, Dijon mustard, and soy sauce until well combined.
Trim any excess fat from the pork roast and pat it dry with paper towels.
Place the pork roast in a large resealable plastic bag or a shallow dish and pour the marinade over the pork. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 1 hour, or ideally overnight.
Remove the pork roast from the marinade and place it in the slow cooker. Pour the remaining marinade over the top.
Cover the slow cooker and set it to low heat. Cook for 6 to 8 hours, or until the pork is tender and easily pulls apart.
Once cooked, remove the pork roast from the slow cooker and let it rest for about 10 minutes. Slice or shred the pork and serve it drizzled with the flavorful juices from the slow cooker.
