A simple yet delightful recipe that brings together four pantry staples to create a creamy, savory dish perfect for busy weeknights or family gatherings.
Ingredients
Scale:
4 cups of peeled and chopped potatoes
1 cup of sour cream
1 cup of shredded cheddar cheese
1 teaspoon of garlic powder
Instructions
Begin by washing, peeling, and chopping the potatoes into even-sized pieces, approximately 1-2 inches each.
Place the chopped potatoes into the slow cooker. Add enough water to cover them and a pinch of salt. Cook on high for 3-4 hours or on low for 6-8 hours, until fork-tender.
Once cooked, carefully drain the excess water from the slow cooker. Add the sour cream, garlic powder, and half of the shredded cheddar cheese to the potatoes. Stir gently to combine.
Using a potato masher or fork, smash the potatoes to your desired consistency. Adjust seasoning with salt and pepper as needed.
Sprinkle the remaining cheddar cheese on top of the smashed potatoes. Cover the slow cooker and let it cook on low for an additional 30 minutes.
Once the cheese is melted, give the potatoes a gentle stir to incorporate the cheese throughout. Serve warm, garnished with herbs or paprika if desired.
