Slow Cooker Depression Era Lard and Noodles

  1. In a large skillet, melt the lard over medium heat. Add the diced onion and cook until it's translucent and starting to caramelize, about 5-7 minutes.

  3. Add the flour and stir to combine. Cook for 1-2 minutes, or until the mixture forms a smooth paste.
  4. Slowly add the chicken broth, whisking constantly to prevent lumps. Bring the mixture to a simmer and cook until it thickens, about 5-7 minutes.
  5. While the sauce is cooking, cook the noodles according to the package instructions. Drain and set aside.
  6. In the slow cooker, combine the cooked noodles, sauce, and diced onion mixture. Season with salt and pepper to taste.
  7. Cook the mixture on low for 2-3 hours, or until the noodles are tender and the sauce has thickened.
  8. Serve the dish hot, garnished with chopped fresh herbs or a sprinkle of grated cheese.
