A cozy, hearty meal that brings together the savory flavors of sausage, the comforting texture of pierogies, and a medley of vegetables, all cooked together in a convenient foil packet.
Ingredients

1 pound smoked sausage, sliced
2 cups pierogies (fresh or frozen)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium onion, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Aluminum foil (heavy duty recommended)
Instructions
Tear off four large pieces of aluminum foil, each about 12 inches long. Lay them flat on a clean surface.
In a large bowl, combine the sliced sausage, pierogies, bell peppers, onion, olive oil, garlic powder, paprika, salt, and pepper. Toss everything together until well coated.
Divide the sausage and vegetable mixture evenly among the four pieces of foil. Fold the sides of the foil over the mixture, then roll the top to seal it securely.
Place the foil packets in your slow cooker. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
Carefully open one packet to check if everything is cooked through and the pierogies are tender. If not, reseal and cook a little longer.
Once done, use tongs to carefully remove the packets from the slow cooker. Let them cool for a couple of minutes before serving.
