Ingredients
Scale:
4 bone-in or boneless pork chops (about 1 inch thick)
4 medium-sized carrots, peeled and cut into 1-inch pieces
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon paprika
Salt and black pepper to taste
2 tablespoons olive oil
1/2 cup chicken broth (can substitute with vegetable broth)
Heavy-duty aluminum foil (for wrapping)
Instructions
Season both sides of the pork chops with garlic powder, onion powder, thyme, paprika, salt, and black pepper. Drizzle olive oil over each chop to create a flavorful coating.
Tear off four large sheets of heavy-duty aluminum foil. Place a pork chop in the center of each sheet.
Distribute the carrot pieces evenly around the pork chops in each packet.
Pour approximately 2 tablespoons of chicken broth into each foil packet.
Fold the foil over the pork chops and carrots, creating a sealed packet.
Place the foil packets in the slow cooker. Cook on low for 6-7 hours or on high for 3-4 hours.
The pork is done when it reaches an internal temperature of 145°F (63°C). Use a meat thermometer to confirm this.
Carefully open the foil packets and serve the pork chops alongside the carrots.
