Ingredients
Scale:
2 lbs of chuck roast or sirloin, cut into bite-size pieces
1/2 cup unsalted butter, melted
4 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon dried thyme
1 lb Yukon Gold or red potatoes, washed and cut into chunks
1 onion, sliced (optional)
2 carrots, peeled and sliced (optional)
Salt and pepper to taste
Instructions
Cut the beef into bite-sized pieces, and the potatoes into similar-sized chunks.
In a bowl, mix the melted butter, minced garlic, parsley, and thyme.
Place the potatoes at the bottom of the slow cooker and layer the beef on top.
Pour the garlic butter mixture over the beef and potatoes. Season with salt and pepper.
Set your slow cooker to low heat and cook for 6-8 hours, or until the beef is tender and the potatoes are cooked through.
Toward the end of the cooking period, check the tenderness of the beef with a fork.
Before serving, give everything a gentle stir to fully coat the beef and potatoes with the infused garlic butter.
