This hearty soup is not only easy to prepare but also incredibly satisfying, making it a perfect choice for busy weeknights or lazy weekends. The combination of savory ground beef and rich, tangy tomatoes creates a flavor that warms the soul.
Ingredients
Scale:
1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
4 cups beef broth
2 medium carrots, sliced
2 celery stalks, sliced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 tablespoon Worcestershire sauce
Chopped fresh parsley (for garnish, optional)
Grated Parmesan cheese (for garnish, optional)
Crusty bread or croutons (for garnish, optional)
Instructions
In a skillet over medium heat, add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat.
Stir in the diced onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onion becomes translucent.
Transfer the beef mixture to your slow cooker, scraping the pan to get all the browned bits.
Pour in the crushed tomatoes, beef broth, sliced carrots, sliced celery, oregano, basil, Worcestershire sauce, salt, and pepper. Stir to combine.
Cover the slow cooker, set it to low, and cook for 6-8 hours, or on high for 3-4 hours.
Taste and adjust seasoning before serving. If desired, sprinkle with fresh parsley and grated Parmesan cheese.
