2 lbs chicken breast, boneless and skinless
1/2 cup honey
1/4 cup butter, melted
3 cloves garlic, minced
2 tablespoons soy sauce
1 teaspoon smoked paprika
12 oz penne pasta
2 tablespoons olive oil
1/2 cup heavy cream
1/4 cup grated parmesan cheese
Salt and pepper to taste
Chopped parsley
Freshly grated parmesan cheese
Zest of one lemon
Instructions
Prepare the Slow Cooker: Place the chicken breasts in the slow cooker. In a separate bowl, whisk together the honey, melted butter, minced garlic, soy sauce, and smoked paprika. Pour this honey butter mixture over the chicken, ensuring each piece is well-coated. Marinate for about 30 minutes if desired.
Cook the Chicken: Set the slow cooker to low and cook the chicken for 4 to 5 hours, or until it is tender and fully cooked. Occasionally stir to ensure all parts are coated with the sauce.
Cook the Pasta: About 20 minutes before the chicken is done, bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente. Drain and set aside.
Combine Everything: Once the chicken is cooked, remove it from the slow cooker and shred it. Return the shredded chicken to the slow cooker. Stir in the cooked pasta, olive oil, heavy cream, and parmesan cheese. Adjust seasoning as needed.
Finish and Serve: Let the mixture cook on low for another 10 minutes. Serve hot, garnished with chopped parsley and more parmesan cheese. Optionally, add a squeeze of fresh lemon juice.
