4 bone-in or boneless pork chops (approximately 1-inch thick)
1/2 cup honey
1/4 cup soy sauce (low sodium preferred)
4 cloves garlic, minced
1 tablespoon rice vinegar
1 teaspoon ground ginger
1/2 teaspoon black pepper
Optional Garnish: Chopped green onions
Optional Garnish: Sesame seeds
Instructions
In a medium bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, ground ginger, and black pepper until well combined.
Place the pork chops in a large resealable plastic bag or a shallow dish. Pour half of the honey garlic marinade over the pork, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
Spray the slow cooker insert with non-stick cooking spray or lightly grease it.
Remove the pork chops from the marinade and place them in the slow cooker. Pour the remaining marinade over the top.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the pork chops are tender and cooked through (internal temperature should reach 145°F).
Once cooked, carefully remove the pork chops from the slow cooker and let them rest for a few minutes. Drizzle some of the cooking juices over the chops and garnish with chopped green onions and sesame seeds, if desired.
