3 pounds of Yukon Gold or red potatoes, washed and cut into 1-inch cubes
2 medium yellow onions, thinly sliced
1 cup (2 sticks) unsalted butter, melted
1 tablespoon garlic powder
1 teaspoon kosher salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
¼ cup fresh parsley, chopped (for garnish)
Instructions
Prepare the potatoes by washing them thoroughly under cold running water. Cut them into 1-inch cubes for even cooking.
Slice the onions thinly.
In a large mixing bowl, combine the cubed potatoes and sliced onions.
In a separate bowl, melt the unsalted butter and add the garlic powder, kosher salt, and black pepper. Stir to combine.
Pour the butter mixture over the potatoes and onions, ensuring that they are well-coated. Toss gently.
Transfer the coated potatoes and onions to your slow cooker. Spread them out evenly.
Cover the slow cooker with its lid. Cook on low for 6-7 hours or on high for 3-4 hours.
Once cooked, stir gently to mix the potatoes and distribute the onions throughout. Adjust seasoning if necessary.
Before serving, sprinkle the chopped fresh parsley over the top.
