2 lbs baby potatoes, halved or quartered
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt

1/4 cup olive oil
1 cup vegetable or chicken broth
8 oz raclette cheese, grated
Fresh parsley, chopped (for garnish)
Instructions
Prepare the potatoes by washing them thoroughly under cold running water. Cut larger potatoes into quarters and keep baby potatoes halved for even cooking.
In a large mixing bowl, combine the halved potatoes with minced garlic, thyme, rosemary, salt, pepper, and olive oil. Toss until the potatoes are well coated.
Transfer the seasoned potatoes into your slow cooker, spreading them evenly across the bottom.
Pour the vegetable or chicken broth over the potatoes.
Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours, until the potatoes are fork-tender.
