There's something deeply comforting about a well-made roast beef dinner. Whether it’s a Sunday family gathering or a cozy weeknight meal, the aroma of tender beef simmering away in a slow cooker creates an ambiance that feels like home. This Slow Cooker Roast Beef Gravy recipe is a nod to traditional American cuisine, combining the rich flavors of perfectly cooked beef with a savory, homemade gravy that elevates every bite.
Ingredients
Scale:
3-4 pounds of chuck roast
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 cup beef broth
1 cup sliced onions
4 cloves garlic, minced
2 tablespoons cornstarch
2 tablespoons water
Optional: 1 tablespoon Worcestershire sauce
Instructions
Begin by patting the chuck roast dry with paper towels. Season the roast generously with salt, black pepper, garlic powder, onion powder, thyme, and rosemary, rubbing the spices into the meat for even flavor distribution.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the roast and sear it for about 4-5 minutes on each side until a golden-brown crust forms.
Carefully place the seared roast into your slow cooker. Add the sliced onions and minced garlic around the roast.
Pour the beef broth around the roast, ensuring it surrounds but does not completely cover the meat. If using, add Worcestershire sauce now.
Cover the slow cooker and set it to low for 8-10 hours, or high for 4-5 hours. Check for doneness by inserting a fork into the meat; it should easily pull apart.
Once the roast is cooked, remove it and let it rest for at least 10-15 minutes. Strain the cooking liquid to separate the onions and garlic.
Mix the cornstarch with water to create a slurry. Stir the slurry into the broth and cover the slow cooker. Cook on high for an additional 10-15 minutes to thicken the gravy.
