3-4 pounds of beef chuck roast
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon paprika
2 cups beef broth
1 cup sliced onions
4 cloves garlic, minced
2 tablespoons Worcestershire sauce
2 tablespoons cornstarch (optional, for thickening)
Fresh parsley for garnish (optional)
Instructions
Pat the beef chuck roast dry with paper towels. Season the roast evenly with salt, black pepper, garlic powder, onion powder, thyme, and paprika.
In a large skillet, heat olive oil over medium-high heat. Add the seasoned roast and sear on all sides until browned, about 3-4 minutes per side.
Place the seared beef roast in the slow cooker. Add the sliced onions and minced garlic around the roast.
In a bowl, whisk together the beef broth and Worcestershire sauce. Pour this mixture gently over the roast and onions in the slow cooker.
Cover the slow cooker with the lid and cook on low for 8-10 hours or on high for 4-5 hours until fork-tender.
If you prefer a thicker gravy, remove the roast once it’s cooked. In a small bowl, mix cornstarch with cold water until smooth. Stir this into the cooking liquid and let it cook on high for an additional 10-15 minutes.
Slice or shred the beef roast and serve it smothered in the rich gravy. Garnish with fresh parsley if desired.
