A refreshing and flavorful dish that combines the best of Italian pasta salads with the ease of a cold summer salad.
Ingredients
Scale:
- 1 pound spaghetti
- 2 cups cherry tomatoes, halved
- 1 cup mozzarella cheese, sliced
- 1/2 cup Italian dressing
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the spaghetti according to the package instructions until it is al dente. Drain and set aside to cool.
- In a large bowl, combine the cooled spaghetti, cherry tomatoes, mozzarella cheese, and chopped parsley and basil.
- In a small bowl, whisk together the Italian dressing and olive oil.
- Pour the dressing over the spaghetti mixture and toss to combine.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
