  1. In a medium bowl, combine the chopped strawberries, sugar, cornstarch, and vanilla extract. Mix until well combined and let it sit for about 15 minutes to allow the strawberries to release their juices.
  2. In a large mixing bowl, whisk together the flour, salt, and sugar. Add the softened butter and mix until the mixture resembles coarse crumbs. In a separate bowl, whisk together the milk and egg, then gradually add to the flour mixture, stirring until a soft dough forms.
  3. On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use a round cutter (approximately 3-4 inches in diameter) to cut out circles from the dough.
  4. Place a spoonful of the prepared strawberry filling in the center of each dough circle. Fold the edges over to encase the filling and pinch them together to seal securely.
  5. You can either steam or bake the dumplings. To steam: Place the dumplings in a steamer basket lined with parchment paper, cover, and steam over boiling water for about 15 minutes. To bake: Preheat the oven to 375°F (190°C), place the dumplings on a greased baking sheet, and bake for about 20-25 minutes.
  6. Once cooked, let the dumplings cool slightly. Dust with powdered sugar if desired, and serve warm with whipped cream, ice cream, or your favorite dumpling sauces for strawberries.
